SUPER SIMPLE CAESAR SALAD
1 cup French bread cubes, or ready-
made croutons
1 head Romaine
1 t. salt
black pepper, to taste
5 anchovies, mashed (optional)
1-2 garlic cloves, minced
2 t. Worcestershire sauce
1 T. Dijon mustard
3 T. red wine vinegar
1 egg or 1/4 cup mayonnaise
1/4 - 1/2 cup olive oil
1 lemon, juiced
1/4 cup fresh chopped parsley
1/4 cup Parmesan cheese

Heat 2 T. oil in a skillet over high
heat. Add the bread cubes and saute
until golden. Remove from heat and
set aside.
Wash and dry Romaine and tear
into 2-inch pieces. Place the romaine
in a salad bowl and sprinkle over it
the salt and a generous grating of
black pepper. Set aside.

(Any way you slice it, it's still the same great bread.)

Combine mashed anchovies, garlic,
Worcestershire sauce, mustard, vine-
gar, remaining oil, egg or mayonnaise
in a bowl and whisk until smooth.
Squeeze lemon juice over salad and
toss. Add Parmesan cheese and serve.
Makes 4 to 6 large servings.

1 pint sour cream
1/2 cup butter or margarine,
softened
1-2 cups Cheddar or any
combination of cheeses,
shredded
1/2 cup minced chives or chopped
