Pour batter into pre- pared pan, smoothing the top. To Bake: Bake for 30 minutes. Cover loosely with foil and continue baking for 30 more minutes, or until a cake tester inserted in the center comes out clean and sides pull away - from pan. Remove foil and cool on rack for 20 minutes. Run a sharp knife around the edge and remove sides of pan. Invert cake onto a cake `-` plate with rimmed edges, or heavy foil and cool to room temperature. (Cake may be refrigerated up to 2 days or frozen, tightly wrapped. Bring to room temperature before glazing.) To Make Glaze: In a small saucepan, melt margarine. Remove from heat and stir in orange juice, brown sugar, and potato starch. Cook over low heat, stirring constantly, until smooth. Bring to a boil for 3 to 4 sec- onds, stirring constantly. Remove from heat and cool until thick enough to glaze the cake. To Glaze: Pour evenly over top and sides of cake, using a small spatula if necessary to smooth sides. Glaze will form a pool on cake plate. (Cake may —) be refrigerated, uncovered, overnight. 'n Bring to room temperature before serving.) To Serve: Garnish top with orange slices or shredded orange eel. Makes: 8 to 10 servings.
