1/4 cup almond slivers
1/ 4 cup shredded cheddar cheese
Preheat oven to 325. Prepare a quiche
or pie pan with oil or baking spray.
Drain the salmon and save the liq-
uid in a measuring cup. Add water to
the liquid to make 1/2 cup. Flake the
salmon and remove skin and bones.
Mix together the eggs, sour cream,
mayonnaise and salmon liquid. Stir in
salmon, 1/2 cup cheese, onion and
dill. Transfer to baking pan. Sprinkle
with 1/ 4 cup cheese and almonds.
Bake for 45 minutes, or until quiche is
firm in center. Serves: 6-8.

ne of the toughest things to
do during the week of
Pesach is to come up with
interesting (and dare I say it
tasty) breakfast dishes.
We've all tried, in one form or
another those prepackaged "cereals"
(and I use the term cereal VERY
loosely) and found them to be some-
what lacking. Sure, our kids will eat
them. They eat anything. But for
me, after two or three days of butter
and matzah or Pesach rolls and jelly
at 7:30 a.m., I start yearning for
something that won't sit in my stom-
ach like a bowling ball for the next
24 hours.
Of course, what I'd really like is a
bagel or toast or coffeecake or any-
thing else but matzah. Not being able
to indulge in those small forbidden
pleasures this week I turn my eyes
(and stomach) to recipes that will
appease my cravings and yet still fall
within the boundaries of what is
acceptable.
The following recipes run the
gamut from simple "grab it on the
run" to the more elaborate "invite
friends over for brunch." All can be
made, ahead of time and reheated if
necessary.
