MOM FOR LUNCH ON TUESDAY, BUT

SHE WAS GOING TO A BOOK REVIEW

IN THE LIBRARY. I DROPPED BY ON

THURSDAY, BUT SHE COULDN'T COME

over medium-high heat. Add onions;
saute until tender, about 5-7 minutes.
Mix in tomato paste, then wine. Bring
to a boil, scraping up any brown bits.
Add broth and sugar, then beef and
any accumulated juices. Bring to a
boil, reduce heat, and simmer, partial-
ly covered for about 1 1/2 hours. Add
potatoes and carrots, simmer uncov-
ered until meat and vegetables are
almost tender, about 25 minutes. Add
squash and simmer for another 10
minutes, until squash is tender. Add
the mushrooms and marjoram.
Simmer until mushrooms are tender,
about 5 minutes. Taste and season
with salt and pepper. Serves 6.

SYRIAN EGGPLANT AND
GARBANZO STEW (PAREVE)

2 1/2 to 3 pounds eggplant, peeled
One-half cup olive oil
1 large Spanish onion, coarsely
chopped
1 large carrot, peeled and coarsely
chopped
1 cup drained canned garbanzo
(chick peas) beans
1 plump garlic clove, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
or more to taste
1/4 teaspoon ground allspice
3 large tomatoes, peeled, seeded and
coarsely chopped
1 teaspoon dried mint
2 tablespoons minced fresh cilantro

Cut eggplant lengthwise in half; cut
lengthwise into 1-inch wide strips.
Cut crosswise into 1 1/2-inch lengths.
In a large heavy saucepan, heat oil.
Add onion and stir over medium heat
until softened, 3-4 minutes. Add car-
rot, garbanzos, garlic, eggplant, salt,
1/2 teaspoon pepper and allspice.
Cover and simmer, stirring occasional-
ly in a folding motion for 10 minutes.

Add tomatoes and enough water to
bring liquid to half the depth of the
solids. Cover and continue cooking
for 20 minutes. Stir in mint and cover
and cook until eggplant is very tender,
about 10 minutes more. This stew can
be served hot, room temperature or
even cold. Stir in cilantro just before
serving. Serves 6.
