Food Cool Weather Soup Favorites PHYLLIS STEINBERG Special to The Jewish News re you in the mood for cabbage soup? I have found a great recipe for Old-Fash- ioned Cabbage Beef Soup in the Souper Skinny Soups cookbook by Yolanda Fintor and Carla L. Henry. OLD-FASHIONED CABBAGE BEEF SOUP 1 tablespoon oil 2 pounds beef shanks 2 onions, chopped 3 carrots, sliced 2 cloves garlic, minced 6 cups water 1 can (28 ounce) Italian tomatoes, packed in heavy puree 1 small head cabbage, thinly sliced 2 tablespoons salt 1 teaspoon pepper 1 bay leaf 1/4 cup lemon juice 1/4 cup packed brown sugar 1 can (8 ounce) julienne-cut beets, drained (optional) Heat oil in large saucepan. Add beef and brown on all sides. Add onions and carrots and con- tinue to brown well. Stir in garlic. Add water; heat to boil. Skim foam off surface. Reduce heat to low. Add undrained tomatoes. Cover and sim- mer one hour longer. Add cabbage, salt, pepper and bay leaf. Cook one hour longer. Add lemon juice, brown sugar and beets. Continue cooking 15 minutes longer. Remove meat with slotted spoon; cut into small pieces and return to soup. Taste and adjust sea- sonings. Serves 6.
