ROMAN-STYLE ARTICHOKES
(PAREVE)
12 baby artichokes
juice of 1 lemon
1 clove garlic, finely chopped
1 bunch fresh mint, finely chopped
extra virgin oil
salt and pepper
1 tomato, seeded and chopped, for
garnish
1. Preheat oven to 350F.
2. Clean artichokes by removing all
the green leaves until you get to the
tender heart. Trim the bottoms with a
sharp knife. As you trim, place arti-
chokes in cold water and lemon juice.
3. Pat dry. Place in ovenproof bak-
ing dish with the garlic, mint and 3
tablespoons olive oil. Season with salt
and pepper. Bake until tender, about
30 minutes.
4. Drizzle artichokes with a little
more olive oil. Garnish with chopped
tomato. Serve at room temperature.
Makes 4 appetizer servings.

OVEN-BAKED BEETS (PAREVE) -
8 beets
2 tablespoons extra virgin olive oil
1 cup kosher salt
salt and pepper
fresh chopped parsley
1. Preheat oven to 350F.
2. Remove the green stems from
the beets and wash beets well.
3. Place kosher salt on bottom of
an ovenproof baking dish. Place beets
on top of the salt. Bake in preheated
oven until tender, about 1 - 1 1/2
hours. Test for doneness by piercing
with a fork.
4. Cool. Peel and slice the beets.
Drizzle with olive oil. Sprinkle with
salt and pepper to taste. Garnish with
parsley. Serve at room temperature.
Makes 4 servings.
