8 medium zucchini (about 2
pounds), trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1 bunch green onions, sliced (about
1 cup)
1/2 cup seasoned dried bread
crumbs
Slice zucchini into 1/8-inch rounds.
In a large skillet over medium-high
heat, heat olive oil. Add garlic, zucchi-
ni and green onions. Saute until veg-
etables begin to soften, about 5 min-
utes. Sprinkle with bread crumbs.
Cook for 1 to 2 minutes for crumbs
to adhere; turn with spatula and cook
on other side for 2 minutes. Serve
immediately.
