The tall grass in the fields, which is so much a feature of the Caribbean, is sugar cane. It is from the sugar cane crop that Caribbean rum is produced. Rum is the Caribbean's own beverage and taking a tour of a rum factory is an interesting way to learn more about the beverage. I have included some drink and food recipes from the Caribbean Rum Book published by Macmillan Educa- tion Ltd 1985. I am giving you my favorite recipe for Party Punch. You can use either light or dark rum. I pre- fer the light rum for parties in the event some guests may not want a real strong rum taste. Enjoy! ;;, PARTY PUNCH 16 ounces orange juice 16 ounces pineapple juice 16 ounces Club soda 16 ounces rum sugar to taste 3 ounces lime juice Pour all the ingredients into a large punch bowl with crushed ice. Serves 6 to 8. PLANTER'S PUNCH 3 parts rum 1 part lime juice 2 parts sugar syrup 3 parts water Dash of Curacao or Angostura bitters Combine all the ingredients and serve in tall glasses with cherries and orange slices. CHOCOLATE RUM MOUSSE 1 package chocolate chips (large) 2 tablespoons water 2 tablespoons rum 5 eggs Melt chocolate chips over low heat. Stir in rum. Separate eggs and beat chocolate mixture into the yolks. Beat egg whites separately and fold in. Pour into custard cups and chill for at least 4 hours. Serves 8.
