heavy saute pan, add the tomatoes,
and cook over low heat until they
have melted, about 10 minutes.

TAGLIARINI
WITH FRESH TOMATOES
3 tablespoons extra-virgin olive oil
6 medium-size juicy ripe tomatoes,
peeled, seeded, and diced
9 leaves of fresh basil
1/4 to 1/2 teaspoon sugar
(optional)
4 1/2 teaspoons coarse sea salt
10 ounces fresh green beans,
trimmed
1 pound fresh egg tagliarini,
tagliatelli, or fettuccine, store-
bought or home-made
Salt
Freshly ground black pepper

Tear the basil leaves roughly by
hand, add to the tomatoes, and cook
for a minute or two longer. Taste the
tomatoes; if they are slightly acidic or
lack sweetness, stir in the sugar. You
may make this ahead and set it aside.
Bring two large pots, each with at
least 4 quarts of water, to the boil.
One is for the beans and the other
for the pasta. Add 1 1/2 teaspoon
coarse sea salt to the boiling water in
the first pot, toss in the green beans,
and cook until they are tender, about
8 minutes. Drain and set aside very
briefly.
Add the remaining tablespoon of
coarse sea salt and the tagliarini to
the boiling water in the second pot
and cook until they are al dente,
about 3 minutes. Drain, reserving a
little of the cooking water to use in
case the sauce is dry.
Warm the tomato sauce if you
made it ahead, toss the tagliariniin
the pan with it, season with salt and
pepper. Scatter the green beans in a
random pattern over the top, warm
them together for a minute or two,
and serve hot.
Serves 4 to 6.
