T
here are many basic sauces
that you can prepare in
advance and are wonderfully
flavorful on ice cream and
other desserts.
One of my personal favorites is from i
Norman Van Aken's cookbook Feast of
Sunlight. This recently published cook-
book contains several good sauce recipes
which you will surely want to add to
your collection.
Remember that it's OK to experi-
ment and substitute fruits in these
recipes. For example, if blueberries are
not available try strawberries or mangos.
When selecting berries, check the
basket or box for stains on the bottom,
which indicate soiled or 'crushed
berries. When 3'rou take them home,
pick through them, discarding any
bruised dec a yed or moldy berries, but
don't wash'theria yet. Refrigerate, loosely
covered, and use within a day or two.
Wash _13 efore using.
Choose orange-yellow apricots and
peaches that are firm but yield slightly
to the touch.
Apples should be . refrigerated.
CHOCOLATE SAUCE
1 cup cocoa powder
1 cup (2 sticks) butter, cut in pieces
1 cup heavy cream
2/3 cup sugar
3/4 teaspoon vanilla
2 tablespoons black raspberry liqueur
or other liqueur of your choice
1. Place the cocoa powder, butter,
cream, and sugar in a heatproof bowl.
Place the bowl over, not in, a pan of
simmering water. When the butter has
melted, whisk the mixture until
smooth. Taste to make sure the sugar
has melted. If it has not, continue
whisking until it has.
2. Remove from the heat and whisk
in vanilla and liqueur.
CHERRY SAUCE
2 cups Black Muscat wine (Elysium
by Andrew Quady), or substitute a
good port.
1/2 cup sugar.
1 cinnamon stick
1 cup bing cherries, halved and pitt
1. Place all the ingredients except the
cherries in.a saucepan and heat to boil-
ing. Reduce heat and simmer 20 min-
utes.
Add cherries and continue cooking 5
minutes more. Remove from heat and
discard cinnamon stick. This sauce may
be served hot or cold.
