QUICK-TO-FIX SOUTHWESTERN RICE (PAREVE) 2 cups water 8-ounce jar chunky salsa 2 cups quick-cooking rice, uncooked 15- or 16-ounce can black beans, drained and rinsed 11-ounce can corn with red and green peppers tortilla chips (optional) Combine water and salsa in large skillet over medium-high heat; bring to a boil. Stir in rice, beans and corn. Remove from heat; cover and let stand 10 minutes. Fluff with a fork; serve immediate- ly with tortilla chips, if desired, or as a side dish. Makes 4 servings. ARTICHOKE RICE SALAD (PAREVE) one 6-ounce box chicken-flavored rice 6-ounce jar marinated artichoke bottoms 3 tablespoons chopped green onions 12 large pimento-stuffed olives, sliced 1/4 cup mayonnaise 1/2 teaspoon curry powder salt and pepper to taste Cook rice according to package directions. Drain and chop arti- chokes, reserving liquid. Add onions, olives and artichoke hearts to the rice mixture. Slowly add the artichoke marinade until the salad is desired consistency. Serve warm or refrigerate and serve chilled. Makes 8 servings.
