Zingerman's Practical Produce, with
20 employees, is projecting $1.6 mil-
lion in sales, a major turnaround.
Because both partners believe so
strongly in their philosophy of being
connected to the community, they cre-
ated Food Gatherers, one of the first
perishable food programs in the coun-
try. It recycles non-spoiled food from
restaurants and other locations for the
hungry and homeless. It is the only
z-)''such program to have grown out of a
for-profit business, and the partners
run it like a business.
In 1988, Food Gatherers processed
63,000 pounds of food. Last year, they
delivered more than a million pounds
of food. They process two tons a day,
six days a week, picking up from 120
different sites and delivering to 86 dif-
ferent agencies. For this, and other con-

-'tributions, Saginaw and Weinzweig
received the Jewish Federation of
Washtenaw County's Humanitarian
Award in 1995.
Yet with all their success, both part-
ners said they are always reminded of a
food industry joke: How do you make
a small fortune in the food business?
Start with a big fortune.
At the seminar, there's not much
/`time for chewing the fat while studying
topics like "Zingerman's Guiding
Principles," "Great Food," "Great
Service," "Great Finance!," and
"Bottom-Line Training."
But Roberto Moscoso from Puerto
Rico thought it was worth the price of
admission. "For me," said Moscoso,
"the whole experience has been very
,useful. I can't go to school to learn this
type of retailing. There's no textbook."
