Under Supervision of the Council of Orthodox Rabbis 1-2 cups powdered sugar Melt chocolate in a double boiler over hot, but not boiling, water or in a 1- quart heavy saucepan over a very low flame. Set aside to cool somewhat. When the chocolate has "some- what, cooled," put in a mixer bowl and combine with sugar and oil at medium speed until well blended. With the mixer running, add eggs one at a time, remembering to scrape the batter from the sides of the bowl every now and then. Turn the mixer to low and gradual- ly add flour, baking powder, salt and vanilla. When everything is well mixed, freeze the cookie batter for at . least 4 to 5 hours. The freezing will harden this loose batter so it can be handled. When you're ready to bake, preheat the oven to 350 and take out two cookies sheets. Spread 1 cup of powdered sugar on a large plate or piece of waxed paper. Remove the cookie batter from the freezer and take a teaspoon and a glass of water (to wet your hands if the dough starts sticking to everything). Now is the time for all good helpers to come to the aid of the baker. The rolling will go much faster with help. Encourage them by telling them that this part is lots of fun and messy, too. Measure a spoonful of bat- ter with a silverware teaspoon (not a measuring teaspoon). Roll it into a 1/2-inch ball, then roll the ball in the powdered sugar until it's completely covered. (Add more powdered sugar as needed; store any leftover sugar in a container with a tight-fitting lid.) Work as quickly as possible, because as the dough warms, it becomes hard- er to handle. Also warm dough will meltthe sugar, and the cookies won't come out as pretty. Place each cookie ball on an ungreased cookie sheet, leaving approximately 1 & 1/2 inches in between to allow for "cookie spread." When you have no more room on your pans, return the bowl to the freezer to keep the batter cold until the next round. Bake the cookie for 10 to 12 min- utes, just until they are slightly firm to the touch. Don't overbake; remember, these cookies are supposed to be chewy, not crispy. When done, remove from the oven, loosen gently with a pancake turner, and place the cookies on wire racks to cool. Enjoy, and save some for others! PICKLES page 112
