Apples and Honey Puffy Pancake Pancake: 3 Tbsp. butter or margarine, melt- ed 1/2 cup lowfat milk 1/2 cup flour 3 Tbsp. sugar 2 large eggs Topping: 3 golden delicious apples, peeled or unpeeled and cut into small cubes 2 Tbsp. butter or margarine 2 Tbsp. honey 1/4 cup sugar 1/2 tsp. cinnamon Combine topping ingredients in a medium bowl and set aside. Preheat oven to 425 degrees. Place melted butter in a glass pie plate, turning to coat sides. In large bowl, place milk, flour, sugar and eggs. Whisk until smooth. Add apple mixture and pour batter into the prepared pie plate. Bake for about 15 minutes, or until pancake is puffed and golden. The apples will still be slightly firm. Serve hot. Makes 6 servings. Chewy Apples and Honey Bars These cookies use sesame seeds, which are popular around Rosh Hashanah. For many, they mean good luck. The more seeds, the more luck. 1/4 cup honey 4 Tbsp. margarine 3 Tbsp. sugar 1/2 tsp. cinnamon 1 cup diced dried apples 1 cup rice cereal (like Rice Krispies) 1/2 cup sesame seeds 1 cup oats (uncooked) Place honey, margarine, sugar and cinnamon in medium saucepan over medium heat. Bring to a boil. Cook for 1 minute, stir- ring until sugar is dissolved. Remove from heat. Add apples, cereal, seeds and oats. Mix well. Press into an 8x8-inch pan. Chill for about an hour or until set. Cut into bars. Makes 16 to 24 bars. Easy Apples and Honey Kugel 12 oz. package thin noodles, cooked, drained and rinsed 1/2 cup oil 5 eggs, lightly beaten 1/2 honey 3/4 cup sugar 4 apples, peeled and diced 1/2 cup golden raisins 1 tsp. cinnamon Preheat oven to 350 degrees. Place cooked noodles in a large bowl. In smaller bowl, combine oil, eggs, honey and sugar and stir to combine. Add to noodles. Add apples, raisins and cinnamon and stir. Pour kugel mixture into 9x13- inch baking dish and bake for 1 hour. Cool completely and cut into squares. Serves 12. / — ' r-- /
