RINKS
CADILLAC

TURKEY BREAST

1 whole turkey breast
Salt, pepper, garlic powder, dill and
other spices
1 whole apple
1 whole onion
1/4 cup parve margarine
Frozen orange juice concentrate
About 1/4 cup flour
Season underside of turkey breast well
with salt, pepper, garlic powder, dried
dill and other spices to taste. Stuff cav-
ity of breast with apple and onion,
both cut in half. Turn right side up
and season top of bird.
Place in greased roasting pan. Cook
uncovered for about one-half hour at
325 degrees. Melt 1/4 cup margarine
and pour over top of breast. Sprinkle
with flour. Bake another one-half hour.
Pour 1/2 can of frozen concentrated
orange juice over top of turkey. Bake
another one-half hour, uncovered.
Cover with foil and bake another 1-
1/2 hours or until done, basting and
checking occasionally.

CABBAGE ROLLS
Part I:
3 pounds ground beef or turkey
2 Tbsp. grated onion
2 tsp. salt
1/2 tsp. pepper
1/4 oz. citric acid, dissolved in 3/4
cups water
3 Tbsp. white sugar
3 eggs, add unbeaten
1/2 cup matzah meal
Part II:
3 pounds cabbage
Large-size can tomato sauce
Large can tomatoes
1 cup brown sugar
Juice of 2 lemons
(Extra brown sugar may be added
for sweeter taste)
Combine all ingredients listed under
A. Soak cabbage in boiling water until
leaves separate and are pliable (about
10 minutes).
Take 2 Tbsp. of meat mixture and
roll in a leaf of cabbage, tucking in the
ends so it will hold together.
Place rolls in roaster pan. Combine
tomatoes, tomato sauce, brown sugar
and lemon juice, and pour over cab-
bage rolls. Bake slowly at 350 degrees
for three hours, basting often. ❑
