A Delicious Dish
That's Fun To Make

I

his 'lasagna' is colorful and easy to make,"
says Jennie Fox of Orchard Lake. "My 4-
year-old daughter Megan loves to assem-
ble all the ingredients into the pan, with a little
help from Mom. Kids will never know they are
eating something so yummy for their tummies."
Fox, a registered dietician,. says she "regularly
sneaks healthy food to my family. My husband
doesn't know to this day how often I give him
soy products."

3 cups spaghetti sauce
1 small onion, chopped
1 large carrot, chopped
1 small bunch broccoli florets
1 package low-fat, firm tofu
1 Tbsp. blackstrap molasses

1 Tbsp. balsamic vinegar
4 oz. canned mushrooms, drained
1 /2-pound ziti, cooked and drained
4 oz. shredded mozzarella
1 Tbsp. parsley

1.) Preheat oven to 375 degrees.
2.) Drain tofu. In a bowl, crumble tofu into small pieces. Add molasses and
balsamic vinegar. Stir to coat the tofu.
3.) In microwave bowl, combine onions, carrots, broccoli. Microwave on

high for about five minutes. Remove from microwave and add mushrooms. Stir
in parsley
4.) In 8"x 8" pan, spread 1 cup of your favorite sauce.
5.) Layer half the noodles in pan and top with half of the vegetable mixture,

noodles, vegetables, tofu and sauce, then top with remaining cheese.
6.) Bake uncovered at 375 degrees for 25 minutes.
