PISKA HASA (CURACAO STYLE RED SNAPPER) 2 pounds red snapper 1/2 cup lime juice 2 to 3 finely chopped scallions 1 minced garlic clove Salt and pepper 1/4 cup butter or oil Flour, seasoned with salt and pepper 1 large chopped onion 1 medium green pepper 2 minced garlic cloves 2 large chopped tomatoes 1 tablespoon tomato paste Marinate the fish in lime juice, scallions, garlic, salt and pepper. Set aside for a bout 2 hours Cut the snapper into serving pieces, dredge in flour. Fry in oil until nicely brown and crisp. Place in a baking pan and keep warm in the oven. In the fish drippings, saute the onion until transparent. Add the- green pepper and garlic and fry for 5 minutes. Add the toma- toes,salt, pepper and paste and simmer for 15 minutes. The cre- ole sauceshould be thick. Before serving, add the red snapper to the sauce and heat thoroughly. Serves 4 to 6. FLTNCHI (CORN-MEAL MUSH) 1 cup corn-meal 1 1/2 cups cold water 1/2 cup boiling water 1 teaspoon salt 1 tablespoon butter or margarine Mix the cold water, corn-meal and salt in heavy saucepan. Stir in the boiling water and butter or mar- garine. Bring to a boil and cook for about 3 minutes. Continue cook- ing for another 3 minutes while stirring with a wooden spoon. Mixture is done when it pulls away from the sides of the pan and is stiff in texture. Remove from heat.
