2/3 cup passion fruit juice or
nectar
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
2 tablespoons dark rum
3 tablespoons chopped cilantro
1 teaspoon grated lemon zest
1 teaspoon grated lime zest
1/2 teaspoon dried hot red
pepper flakes
1/4 teaspoon salt

In a small bowl, whisk together
the juices and rum. Stir in
the cilantro, lemon and lime
zests, pepper flakes, and salt.
Place chicken or fish in over-
lapping layers in a glass or ce-
ramic dish.
Add marinade, turning or
stirring to coat. Cover and re-
frigerate, turning occasionally,
1 or 2 hours for chicken, 30 min-
utes to 1 hour for fish.

MINTED GRAPEFRUIT
AND HONEY MARINADE

Makes about 1 1 /4 cups; enough
to marinate 1 1 /2 pounds of
skinless, boneless chicken breasts
or turkey breast cutlets.

1 cup fresh grapefruit juice
3 tablespoons vodka
1 tablespoon honey
3 tablespoons chopped fresh
mint
1 tablespoon grated grapefruit
zest
2 teaspoons grated fresh ginger
1 teaspoon ground coriander
seed
1 jalapeno pepper, seeded and
minced

In a small bowl, whisk together
the grapefruit juice, vodka, and
honey. Stir in remaining ingre-
dients. Place the poultry in a
shallow glass or ceramic dish.
Add the marinade, turning to
coat.
Cover and refrigerate, turn-
ing occasionally, 1 to 2 hours.

MAPLE, SAGE AND
CIDER MARINADE

Makes about 1 11 2 cups; enough
to marinate 1 small turkey
breast.

1 cup apple cider
1/2 cup maple syrup
1/2 cup cider vinegar
3 tablespoons chopped fresh
sage or 1 tablespoon crumbled
dried
1/2 teaspoon salt
1/2 teaspoon coarsely ground
pepper

In a small saucepan, gently boil
the cider for 5 to 7 minutes un-
til it is reduced to 1/2 cup. Let
the cider cool, then combine it
with the remaining ingredients
in a small bowl.
Place the turkey in a shallow
glass or ceramic dish. Add the
marinade and turn to coat. Cov-
er and refrigerate, turning oc-
casionally, 2 to 4 hours for
turkey.
