"These early sources of fund-
ing not only helped us financial-
ly, but they also gave us the
encouragement we needed to
make our vision a reality," said
Ms. Perrault, who also served as
the contractor on the renovations
at the store.
The planning of Avalon Inter-
national began in October 1995,
when the two women started re-
searching the feasibility of locat-
ing their business downtown.
It apparently was a good idea.
"Their business has supported
the housing effort in this area,"
said Bob Slattery, of Mid-Town
Development. "Also, the Cass
Corridor Food Co-op (three doors
down from Avalon) supports
40,000 visits a year. The two are
very complementary to each oth-
er."
The new bakery has several
commercial accounts, plus its re-
tail sales, and one full-time and
two part-time employees.
To learn how to bake bread,
Ms. Victor and Ms. Perrault trav-
eled to the Stone House Bakery
in Leland, where they spent last
summer working for the bakery's
owner, Bob Pisor.
Other than selling the oven
from to Ms. Victor and Ms. Per-
rault, the manager of Zinger-
man's Bakehouse was also very
supportive of the effort.
"I was a sounding board for
price structures and their floor
plan," Frank Carob° said. "They
both came to Ann Arbor on a
number of occasions to see us in
production."
"We used Zingerman's as a
model of community relations
and how to treat employees," Ms.
Victor said.
Despite the over 80 hours a
week that both Ms. Victor and
Ms. Perrault each put in at the
store, they both are most proud
of the fact that there is nothing
like their store in the area.
`There are a few bread shops
in the state like this, but nothing
in the metro area," Ms. Victor
said. "Put salami or cheese on our
bread, and you know why the
sandwich was invented." ❑
