From his New York office he asks, Why should this night be any different than any other when it comes to healthful eat- ing? For a gastroenterologist who eats a board of matzah every day for lunch with a tomato and,ap- ple, Passover might not alter the daily dietary routine. But for oth- er Jews who struggle to bite-it- 'n-write-it and count fat grams, the traditional holiday foods can be cause for panic. Particularly disruptive to weight control habits are the two seders, multi-course, cholesterol- rich banquets that stretch until the wee hours in the name of tra- dition. Several Jewish experts in nutrition, weight loss and D healthy cooking agree with Dr. Rechtschaffen that Passover does not have to spell defeat for the conscientious dieter.
