ately from the heat. Spread
some glaze over the top of the
cake just before it goes in the
oven. Bake in a preheated
350-degree oven for 30 min-
utes. Remove the cake from
the pan to cool on a wire rack.

While still warm, brush with
the remaining honey glaze.
When the cake has cooled,
split it and fill with the al-
mond/cream filling. Arrange

Happy
Yam
Ha'atzmaot!

Israel was declared a state on May 14,
1948 (the fifth of Iyar on the Hebrew cal-
endar). This year in the United States Yom
Ha'atzmaot will be observed Monday,
May 12 (5 Iyar).
Most congregations celebrate the day
with parties and other festivities. Some
synagogues and temples commemorate
the date as a religious holiday, for which a
special liturgy has been composed.
New York City, where the world's
largest Jewish population re-
sides, often hosts a pa-
rade with floats
and marching
bands. In Israel,
there are song
festivals, air
shows, dances
and numerous cele-
brations.
Israeli Independence Day sea
The day be-
fore Israel Independence Day is Yom
HaZikaron, Memorial Day. Unlike in the
United States, this is not a day for picnics
and shopping at the mall. Many Israeli
families have had a father, mother, grand-
parent or other close relative who died
fighting for Israel's survival, and so the day
is a painful but important one. Families
visit cemeteries or war memorials; for two
minutes, a sharp siren is sounded through-
out the country and everyone stops. Cars
and buses pause in the middle of their
journeys. Normally boisterous cafes sud-
denly become silent. It is an unforgettable,
haunting sight.
