Five decades ago, crabs were so cheap and plentiful that they were sold by the bushel. But the fiery, fragrant blend of herbs and spices was not a certified kosher product and was so close- ly associated with these crus- taceans that Old Bay Seasoning was never an option in kosher cooking. No longer true. In 1990, the brand was sold to McCormick & Co. Inc., the firm that nearly 60 years ago had fired the man who created Old Bay. The popular sea- soning is now produced under the OU certification (although, in- congruously, crab and shrimp de- pictions still appear on the label). Ironically, it was a German Jew who created the lively combina- tion that completely changed the steamed crab and seafood indus- try. In 1938, Gustav Brunn, with his wife and family, was forced to flee Nazi Germany. Having owned and operated a successful spice business in Wertheim, Germany, for 19 years, Mr. Brunn arrived in Baltimore with a few small grind- ing machines, eager to start anew in America. But at that time, work was hard to find, especially if you were a Jewish refugee. Mr. Brunn was hired by a spice company called McCormick's, which dealt primarily with the retail trade. Af- ter three days, the Reform Jew from Germany was fired. At age 45, with a family to sup- port and the urgent need to make a living, Gustav Brunn decided to go into business for himself. He traveled to New York, prepared to cajole and plead with spice sup- pliers for credit. Two of the im- porters he talked with knew him from his spice business in Ger- many. They were aware of his fine reputation, knew he could be trusted — and had no hesitation giving him credit on the spot. The spice blend that was to tan- talize the taste buds of Balti- moreans was created in a tiny rented second-floor property across from what was then the wholesale fish market. From this location, Mr. Brunn began to sell spices to the crab steamers. Gustav's son, Ralph Brunn, now 72, who as a youngster of 14 helped in the business, remem- bers, "My father had never seen a crab before, but he was curious, and thought it a good idea to make a seasoning to enhance the bland- ness of the steamed crabs." He quizzed the crab steamers to get a consensus of opinion on taste, color and texture, then ex- perimented with various blends he was confident would make bland seafood sparkle — "fire" came from hot peppers; the fra- grance, from exotic spices such as nutmeg and cardamom. The punchy Old Bay Season- ing in the yellow, red and blue tin, originally designed by Ralph Brunn "to look like a billboard," isn't just for seafood. It will spark and liven traditional and con- temporary Jewish cooking like Shabbat chicken, briskets, veg- etables, pasta ... and of course, fish, as in the recipes below. BOUNTIFUL SEAFOOD CHOWDER (PAREVE) 3 cans (10 1/4 ounces each) vegetable broth 6 cups water 1 medium onion, chopped 2 tablespoons Old Bay Seasoning (or to taste) 1 can (16 ounces) whole tomatoes 2 boxes (10 ounces each) frozen mixed vegetables 5 cups sliced potatoes 1 pound fish fillets In a large pot, combine veg- etable broth, water, onion and Old Bay Seasoning. Bring to a boil. Add tomatoes, mixed vegetables and potatoes. Cover and simmer 30 minutes. Stir in fish. Simmer 30 minutes longer until vegeta- bles are tender and fish is easily broken into chunks. Serve hot. Makes 8 hearty servings. LEMON-SPIKED SHABBAT CHICKEN (MEAT) 3 1/2-4 pound roasting chicken 1 lemon 6-8 stems fresh parsley 2 tablespoons vegetable oil 2 tablespoons Old Bay Seasoning Preheat oven to 325. Wash chicken under cold water and pat dry with paper towels. Cut lemon in half and squeeze juice into chicken cavity. Add the lemon halves, parsley and sprinkle with half the Old Bay Seasoning.
