2 egg whites
1/3 cup buttermilk
2 tablespoons unsweetened
applesauce
1 teaspoon fresh lemon juice
Glaze
2 tablespoons light butter
114 cup sugar
1 tablespoon fresh lemon juice

Preheat the oven to 350. Light-
ly coat an 8 x 8 x 2-inch baking
pan with nonstick vegetable oil
spray.
To make the bread: Rinse the
fresh blueberries, discarding any
stems or blemished berries. If us-
ing frozen berries, drain the
thawed berries.
In a small bowl, combine the
all-purpose flour, the 3/4 cup sug-
ar, whole-wheat flour, baking
powder, lemon zest and salt.
In a medium bowl, beat the
egg whites with an electric mix-
er until foamy.
Add buttermilk, applesauce,
and the 1 teaspoon lemon juice
and mix until blended. Add the
flour mixture and mix until
blended. Gently fold in berries by
hand.
Spread batter in the prepared
pan. Bake 35 to 40 minutes, or
until a toothpick inserted near
the center comes out clean. Just
before the bread is done, prepare
the glaze.
To make the glaze: In a small
saucepan, melt the light butter.
Stir in the 1/4 cup sugar and
the 1 tablespoon lemon juice.
Cook and stir over low heat un-
til the mixture is bubbly. Remove
from heat.
When the bread tests done,
pour glaze over the top. Return
the glazed bread to the oven and
broil 3 inches from the heat for 1
to 2 minutes, or until the glaze
bubbles. Watch carefully to avoid
overbrowning.

1 teaspoon baking powder
1/2 teaspoon baking soda
