ING ... RING ... RING ...
Hello and welcome to the
Calorie Absolution Hot
Line.
We're the people who can put
the fun back into eating. That's
right, we're the ones that have
been lobbying the FDA to declare
chocolate its own food group.
Yes, friends, we here at the
Calorie Absolution Hot Line can
make all your worries about over
eating disappear. We have the
recipes that help you navigate
through the pitfalls and potholes
that make dieting so difficult.
We have carefully selected
several key areas that seem to
cause our clients the most trou-
ble. We've come up with alter-
nate, low calorie substitute
recipes for popular favorites. If
for any reason you are dissat-
isfied with any of the recipes we
here at the Calorie Absolution
Hot Line have selected, we will
cheerfully give you double the
calories back.
If chocolate is the way you
deal with stress and sub zero
digits, try this low-fat, lower
calorie version of Chocolate Chip
Banana Bread.
LOW-FAT CHOCOLATE
CHIP BANANA BREAD
1/2 cup fat free dairy sour cream
2 teaspoons baking soda
1 1/2 cups sugar
1/4 cup diet margarine, softened
1 teaspoon vanilla
1/2 cup egg substitute
3/4 teaspoon salt
3 cups flour
3 RIPE bananas
2 cups reduced fat chocolate
chips
1/2 cup chopped nuts (optional)
Preheat oven to 350. Grease 2
9x5x3 loaf pans and set aside.
In a small bowl stir together
sour cream and baking soda, Set
it aside.
In a large bowl, beat the sug-
ar and margarine and vanilla to-
gether until well blended.
Gradually add the egg substi-
tute and salt. Beat well. Add the
flour to sugar/margarine mix-
ture and mix well. Add sour
cream mixture, bananas and
mix well. Fold in the chips and
nuts. Pour the batter evenly into
the two pans and bake 45 to 50
minutes.
Cool 10 minutes and then re-
move the banana bread from the
pans. Continue cooling on wire
racks. Makes 2 loafs
If ice cream or ice cream treats
are a weakness, try a Fruit
Frosty or Smoothie to combat
those cravings.
FRUIT FROSTY
1 cup pineapple chunks (fresh is
best)
1 cup orange/banana juice
1 cup strawberry sorbet
1/4 teaspoon ground ginger
Combine all the ingredients in a
blender and blend well. You can
add 2 or 3 ice cubes for a "colder"
frosty. Serves 4.
FRUIT SMOOTHIE
1 cup pineapple chunks
1 cup blue berries
1 medium banana
1 cup skim milk
Combine all the ingredients in
a blender and blend until
smooth. You can add 2 or 3 ice
cubes if you like. Serves 4.
Pasta dripping with a heavy
cream sauce is another area
that's seems to be especially
troublesome to a majority of our
subscribers. This recipe for un-
fried rice might just be a nice
substitute. You can add chunks
of chicken or beef if you need to
make it a more of an entree than
a side dish.
We often find that fried foods
provide an irresistible tempta-
tion. Unfried Rice is a perfect re-
sponse to the need for greasy,
finger-licking food.
UNFRIED RICE
1 egg, beaten or egg substitute
3/4 cup uncooked regular long
grain rice
2 cups low-fat chicken or
vegetable broth
1/4 teaspoon garlic powder
1/2 cup carrot, thinly sliced
2 green onions, thinly sliced
1 stalk celery, diced
1/4 cup red or green pepper,
diced
1/2 cup frozen or canned peas
Spray a medium nonstick skil-
let with cooking spray and heat
over a medium heat for 1
minute. Add egg and stir well.
When the egg is set remove it
from the pan and set it aside.
Remove the pan from the heat
(do not clean it) and spray it with
the cooking spray again. Add the
rice and cook it until browned, stir
constantly. Stir in the broth, gar-
lic powder and carrot. Heat the
mixture to a boil and then reduce
the heat to low. Cover and cook 15
minutes. Then add the remaining
vegetables. Cover and cook an ad-
ditional 5 minutes or until the rice
is done and most of the liquid is
absorbed. Stir in the cooked egg
and mix well.
At this point, you can add
chunks of chicken or beef if you
want to round out the dish. Serve
immediately. Serves 4. 0
