Or, for that matter, a light-lemony broth dusted with aromatic fresh herbs that fits in just as well at an elegant dinner party as at a family supper. Soup is the most forgiving and the easiest of dishes to prepare. It can wait on the back of the stove for an hour or so, or in the refrig- erator, ready to heat for latecom- ers. As for measurement, a little more or less won't hurt. If a vegetable soup is too thin, thicken with pasta, mashed pota- toes or extra bits and pieces of veg- etables softened in the microwave. Add shredded cooked meats and poultry and you'll have a glorious one-dish meal. And with the con- venience of fresh prepared veg- etables such as cauliflower and broccoli florets, sliced mushrooms and combination spices bursting with flavor, preparation is effort- less. The recipes below are uncom- plicated versions of soups tradi- tional to Ashkenazic and Sephardic Jewish cuisine and servings are generous. There won't be much left over, but if there is, soups freeze beautiful- ly. SWEET AND SOUR COMFORT SOUP (MEAT) 2 tablespoons vegetable oil 3 large onions, coarsely chopped 2 teaspoons salt 3 tablespoons beef bouillon granules I small head (I 1/2 pounds) cabbage, shredded 1 can (46 ounce) tomato juice 1 can (141/2 ounce) stewed tomatoes 1/4 cup cider vinegar 1/3 to 1/2 cup brown sugar 4 bay leaves 1 teaspoon dried basil 1 teaspoon lemon pepper seasoning In 6 quart pot, heat oil. Add onions and salt. Cover and cook over low heat for 40 minutes un- til onions are soft and golden. Add bouillon and cabbage. Stir to mix. Cover and cook 30 minutes longer until cabbage is soft. Add tomato juice, tomatoes, vinegar, 1/3 cup brown sugar, bay leaves, basil, lemon pepper seasoning and 11/2 cups water. Stir and partially cov- er. Cook over medium low heat 30 minutes longer. Season to taste with salt and pepper and a little more brown sugar if needed. Makes 12 to 15 hearty servings. PEPPER SOUP WITH KASHA (PAREVE) 2 tablespoons vegetable oil Whole broilers 3 medium tomatoes, diced 1 (16 ounce) bag frozen sliced PePPers 1 (46 ounce) can vegetable juice 1/4 cup medium kasha 1 tablespoon balsamic vinegar 1 teaspoon minced garlic 2 teaspoons dried basil salt and pepper to taste .79 Lb. hrin • Heat oil in large saucepan. Add tomatoes and saute over medium heat 5 minutes until soft. Add pep- pers. Cover and cook until thawed, 8 to 10 minutes. Add vegetable juice, kasha, vinegar, garlic, basil, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to boil. Reduce heat to simmer and cook 5 minutes un- til kasha is tender. Season to taste with salt and pepper. Serve hot. Makes 6 to 8 servings. Heat oil in large pot. Add ground beef and cook over medi- um high heat until no trace of pinkness remains, 5 to 8 minutes. Drain off any fat. Add onions, potatoes, carrot, barley, broth, gar- lic, caraway seeds and salt. Bring to boil. Stir and reduce heat to sim- mer. Skim off any foam as it forms. Cover and cook for 40 min- utes stirring occasionally. Add parsley just before serving. Serve hot.
