baking dish. Brush bread with
mustard-butter. Arrange 3 slices,
buttered side up, to fit in baking
dish, trimming if necessary. Top
with a layer of red peppers, then
half of the herbed cottage cheese.
Arrange remaining bread, but-
tered side down, over cottage
cheese, to fit. Top with remaining
peppers and cottage cheese.
4. In a medium bowl, whisk
eggs, milk, salt, and pepper until
blended. Pour slowly and evenly
over strata. Cover with foil and re-
frigerate overnight.
5.Preheat oven to 350 degrees.
Bake strata, uncovered, 1 hour, or
until puffed, golden, and set.

Preparation time: 10

Cooking time: 8 to 10
minutes
1/2 cup sugar
1/2 teaspoon vanilla extract
2 egg whites
1/3 cup sifted flour
pinch of salt
4 tablespoons butter, melted
1/2 cup sliced almonds
1. Set rack in lower third of oven
and preheat to 375 degrees. Line
a cookie sheet with aluminum foil,
dull side up.
2. In a medium bowl, beat sug-
ar, vanilla, and egg whites until
foamy. With a large spoon, stir in,
don't beat, flour, salt, melted but-
ter, and almonds.
3. Drop batter by tablespoons
onto cookie sheet, spacing cookies
2 inches apart. Spread into even
circles with back of a metal spoon.
4. Bake 8 to 10 minutes. Work-
ing quickly, lift hot cookies off bak-
ing sheet and bend each over a
rolling pin so it takes on shape of
a curved roof tile. Leave on pin un-
til set,, about 15 seconds.
Slide off and repeat. Store in an
airtight container.
