4 Rock-Cornish hens
2 oranges, cut into 9 slices
1/4 cup margarine
1 tsp. fresh ginger,. minced fine
1 /4 cup diced onions
1 1 /2 tsp. mustard
I /2 cup ketchup or chili sauce
I /4 cup soy sauce
1 tsp. Worcestershire sauce
6 oz frozen concentrate lemonade
16 oz pitted plums in juice, pureed in blender

from work. Dad comes home from work.
They're both exhausted. Dad puts his feet
up and watches the news. Mom starts din-
ner.
Not always, thank goodness.
In the Cohen home in Franklin, it's father Rick
who loves to cook and who provided The Apple-
Tree with this month's delicious recipes.
When not working hard at the stove, Dr. Co-
hen also is a podiatrist. His wife, Linda, teaches at
Detroit Country Day School. The couple, who
have been married 23 years, came to Michigan
intending to be here for Dr. Cohen's one-year resi-
dency only. They ended up staying for 19 — so

Dr. and Mrs. Cohen are the parents of three
girls: Lauren, 19, Jaime, 15, and Meredith, 11.

Fried Rice
1 alp Riceland rice
2 cups water
1/2 tsp. salt
I /2 ladle Wesson oil
2 eggs
1/4 bean sprouts
1 /2 tsp. salt
1 /2-1 tsp. soy sauce
3/4 Tbs. thick soy (molasses)
1 cup diced chicken (if desired)

Preheat oven to 350 degrees.
Split hens in half and season with salt, peppe r
and garlic. Place skin side up in shallow pan,
atop orange slices.
Cook for 45 minutes.
Meanwhile, combine in saucepan the mar-
garine, gnger, onion.s, mustard, ketchup, soy
sauce, Worcestershire sauce, lemonade and
pureed plums. Mix well and simmer for 15 min-
utes.
Pour plum sauce over hens. Bake for 20 more
minutes, basting often.
Serve hens on platter, topped with sauce from
Pan.

Cook rice, then set aside for 10 minutes.
Heat wok to hot with oil. Add two lightly
scrambled eggs. Cook and remove. Add chick-
en and stir fry, then add bean sprouts. Add
cooked egg and rice. Mix and cover one
minute. Add salt, soy sauce, thick soy. Mix well
and serve.
