CHOCOLATE SILK PIE

Crust:
7 oz. chocolate wafer cookies or
graham crackers
2 tbsp. canola oil
Filling:
8 oz. unsweetened chocolate
2 10 oz. package silken tofu
10 oz. jar blackberry preserves
1 tsp. vanilla extract
1 cup honey

Crust: preheat oven to 350 de-
grees. In blender or food proces-
sor, combine cookies and oil and
pulse to make fine crumbs. Press
into bottom of spring form pan
or pie plate. Bake 10 minutes.
Cool.
• Filling: Melt chocolate in dou-
ble broiler or over very low heat.
Put remaining ingredients in
bowl or food processor or blender
and add melted chocolate. Process
until very smooth, stopping occa-
sionally to scrape down sides.
Pour filling into crust, smooth
top and refrigerate until firm, at
least 4 hours or overnight. Serves
12.

SPICY BEAN DIP

1 15 oz. can pinto beans
3 chopped green onions
1/4 cup chopped fresh parsley
1/2 cup chopped red pepper •
1/2 tsp. cumin
1/2 cup salsa

Mash pinto beans with fork in
a medium bowl. Add the rest of
the ingredients and mix well.
Serve with low fat chips or baked
tortillas.

SPINACH DIP
1 package frozen chopped

spinach, thawed and drained
well
1/2 cup chopped water chestnuts
1 cup non-dairy sour cream
1 cup low fat non-dairy
mayonnaise
1 package Lipton vegetable soup
mix

Combine ingredients and mix
well. Chill for at least 2 hours.
Cut out the center of a round rye
bread loaf. Take the center piece
of bread and cut it into cubes. Fill
the hollowed out bread bowl with
the dip. Use the cubed pieces of
bread as the garnish and serve
together.

1/2 cup low fat soft curded tofu
2 tbsp. non-dairy mayonnaise
