FRESH SALSA WITH
TOASTED TORTILLAS
MAKES 5 CUPS
3 large tomatoes, coarsely
chopped
2 small red onions, finely chopped
4 garlic cloves, minced
2 tablespoons seeded, finely
chopped jalapeno peppers
1/2 cup chopped cilantro
1/2 cup red wine vinegar
1 teaspoon salt
2 tablespoons olive oil
1/2 teaspoon black pepper
1 package soft corn tortillas, cut
into quarters
1. Place the chopped tomatoes in
a large bowl (if they are very wa-
tery, drain the excess liquid). Add
the onions, garlic, jalapenos,
cilantro, vinegar, oil, salt, and pep-
per, and mix until well blended.
Let the salsa stand for at least 30
minutes before serving.
2. Preheat the oven to 425 de-
grees.
3. Working in batches, arrange
the tortillas on a large baking
sheet and bake a few minutes on
each side, until the chips begin to
crisp and turn brown. Let the
chips cool completely before serv-
ing with salsa.

1. Place the chick peas in a food
processor and process for 30 sec-
onds to 1 minute, or until the chick
peas are coarsely chopped. Add the
parsley, onion, garlic, lemon juice,
and oil, and process until smooth.
2. Transfer the hummus to a
serving bowl. Stir in the salt and
cayenne pepper.
3. Place the pita bread quarters
on a large baking sheet and toast
under the broiler for 1 minute.
4. Place the bowl of hummus in
the center of a serving platter.
Arrange the toasted pita

ZESTY GUACAMOLE
MAKES 6 CUPS
6 ripe avocados, peeled and pitted
3/4 cup finely chopped red onion
3 garlic cloves, minced
1/3 cup fresh lime juice
1/3 cup sour cream
1/3 cup chopped cilantro
1 tablespoon chili powder
1 1/2 teaspoons salt
3/4 teaspoon black pepper
1/2 teaspoon hot pepper sauce, or
to taste
tortilla chips
1. Place the avocados in a large
bowl and mash them lightly with
a fork, leaving them slightly
chunky.
2. Add the onion, garlic, lime
juice, sour cream, cilantro, chili
powder, salt, pepper, and hot pep-
per sauce, and mix until well
blended. If not serving immedi-
ately, lay the sheet of heavy-duty
plastic wrap directly on the sur-
face of the guacamole, cover the
bowl, and refrigerate.
3. Serve the guacamole with tor-
tilla chips. ❑
