Once upon a time I lived in par-
adise.
When I was little, my father
would take my older brother and
me to breakfast at a small bakery
— the Bagel Paradise. The bak-
er, a huge man with powerful
forearms, always greeted us from
behind the counter. Smiling, he
A would slice up large poppyseed
bagels and spread them with
fresh cream cheese.
Slightly crunchy on the outside,
soft and tender inside, his bagels
easily filled us until lunchtime.
There are at least half-a-dozen
"gourmet" bakeries within a few
blocks of my home and each
boasts an impressive menu of
bagels. Some are made with
_ cheddar cheese, others with zuc-
/
chini. There are whole wheat
bagels and ones made with rose-
mary. Every morning, crowds of
people line up for their bagels and
French or Colombian roasted cof-
fees. It took just one visit for me
to realize that something has been
lost.
`Today's ersatz bagels are man-
ufactured at high speed and the
doughs used are very simple,"
says Arnold Dworkin, owner of
Kaufman's Bagel and Deli-
catessen in Skokie, M. "Old-style
bagels are made more slowly with
a more complex mix of ingredi-
ents. They eat differently."
Kaufman's, which sits smack
in the middle of an old Jewish
neighborhood, reminds me of that
bakery my family visited so long
/— I ago. It's a weathered, flat-roofed
store, settled in with other older
shops and businesses. A cus-
tomer takes a ticket and waits his
or her turn.
There's plain, onion or poppy-
seed bagels and a hearty selection
of breads and rolls — nothing fan-
cy and no gourmet coffee.
Mr. Dworkin's father estab-
lished Kaufman's in the 1920s.
In those days, it was a European
bakery and sold a variety of rolls
and breads.
"A lot of people steam their
bagels," says Mr. Dworkin. "We
boil them. It's superior because
the bagel gets a nice, pliable skin
and it takes out some of the
starch."
I'm a long way from my child-
hood. But when I make the trip
across town to Kaufman's and
pick up some fresh bagels, it feels
a lot closer. ❑

Morris Baker was an architect and a builder, but he was primarily a builder of
family, of community and of Jewish continuity. A Zionist leader and philanthropist,
he served as vice-president of Metro Detroit ZOA and was a member of ZOAs
national board and its national executive committee. Zionism and Israel were
Morrie Baker's "magnificent obsession." He and Beverly acquired a home in Netanya
and subsequently in Jerusalem to forge a personal link with Israel and its people.
Members of Congregation Shaarey Zedek and of the national board of CLAL, the
National Jewish Center for Learning and Leadership, they maintained a close, per-
sonal relationship with CLAUs founder, Rabbi Irving ("Yitz") Greenberg and with the
famed Talmud commentator, Rabbi Adin Steinsaltz.
A community leader in her own right, Beverly Baker is a Life Member of the
National Council of Jewish Women, a past Presidium-Member of the Brandeis
University National Women's Committee, a former Board member of the Women's
Division of the Jewish Federation of Greater Detroit and a board-member of Metro
Detroit ZOA. She is also a life member of ORT, Hadassah, WIZO, B'nai Brith Women,
Naamat, Friends of Hillel Day School and the Sisterhood of Congregation Adat
Shalom. An art enthusiast and collector, Beverly Baker is a graduate of the University
of Michigan School of Music and has taught music at the Berkley School System.

Chairman of the Passage to Freedom campaign.
Mr. Borman is an officer of national UJA, and in
1991/92 he served as Chairman of the Major Gifts
Committee of UJAs Midwest Region. He also
serves on the executive committee of CLAL and is
Chairman of Operation Independence.

Mr. Borman was the recipient of the Jewish Theological Seminary's National
Community Service Award. He is a director of Congregation Shaarey Zedek's
Endowment Committee, the Weizmann Institute of Science and the National Jewish
Coalition. He is also executive committee member of the American Israel Political
Action and serves on the Board of Overseers of the Hany S. Truman Research
Institute at the Hebrew University in Jerusalem.
