CHOCOLATE CHIP- ALMOND POUND CAKE SERVES 16 1 1/2 cups sliced almonds 3 cups flour 1 teaspoon baking powder 1/4 teaspoon salt 3 sticks butter, at room temperature 2 cups sugar 8 eggs 1 1/2 teaspoons almond extract 1 6-ounce package semisweet chocolate chips 1. Preheat the oven to 350 degrees. Butter and flour a 10-inch bundt or other fluted tube pan. 2. In a large nonstick skillet, toast the almonds over medium heat, stirring frequently so that they toast evenly, about 10 min- utes. Remove the almonds from the pan to cool while you mix the batter. 3. In a medium bowl, combine the flour, baking powder, and salt, and thoroughly blend. 4. In a mixing bowl, cream the butter and sugar. Beat the eggs in one at a time, beating well after each addition. Beat in the almond extract. 5. Beat in the dry ingredients. By hand, stir in the chocolate chips and the cool toasted almonds. 6. Turn the batter into the pre- pared pan and spread it evenly. Rap the pan on the counter once or twice to remove any air pock- ets. 7. Bake the cake for 1 hour and 5 minutes, or until a toothpick in- serted halfway between the tube and the edge of the pan comes out clean. 8. Cool the cake in the pan on a rack for about 30 minutes.
