12 chicken thighs, skin removed

sor, puree garlic, jalapeno,lime
juice, honey, paprika, Tabasco,

medium-high heat for about 2
minutes. Remove from heat.
Add the cilantro and parley. Set
aside and allow flavors to meld.
Heat a large saute pan until
hot. Add the olive oil and chick-
en thighs and cook over medium
heat until cooked through and
browned on the outside. Remove
from pan. Place two thighs on
each plate and pour sauce over
all. Serve with white rice and
fresh green beans.
Garnish with fresh cilantro
sprigs and slices of fresh lime
cut lengthwise.

Heat vegetable oil in deep-fryer
to 375 degrees. Sift 1 cup of the
flour together with the granu-
lated sugar, salt, and baking
powder. Beat egg and milk
together well. Add to flour mix-
ture by beating in with a whisk
until smooth. Add oil.
Carefully roll bananas in re-
maining 1/2 cup of flour so that
all sides are covered, then dip
into batter. Deep-fry for 4 to 6
minutes. Sprinkle with cinna-
mon and serve with vanilla
yogurt. Serves 6-8.
