SUMMER BERRY PIZZA (PARVE) 1 cup all-purpose flour 1 1/2 teaspoons baking powder 2 tablespoons margarine 1/4 teaspoon fresh ground pepper about 1/3 cup apple juice 1 cup sliced strawberries 1/2 cup blackberries 1/2 cup raspberries 2 tablespoons melted margarine 3 tablespoons cinnamon sugar Preheat oven to 400F. In processor, place flour, baking powder, margarine and pepper. Process to coarse crumbs. Add enough apple juice to make a smooth, stiff dough that should come away from the sides of the bowl. On floured surface, roll into an 8-inch circle. Place on baking sheet or 9-inch pie dish. Arrange strawberries around the outer edge of circle. Fill in with black- c=\ berries and then with raspber- ries in center. Brush with melted margarine and sprinkle cinna- mon sugar over. Bake in pre- heated oven 20 minutes until pastry is nicely browned at edges and on bottom. Cool slightly be- fore cutting. For a dairy dessert or snack, serve with softly whipped cream dusted with a lit- tle nutmeg. Makes 6 servings. POWER BREAKFAST ON THE RUN (DAIRY) 6 strawberries, sliced 1/2 cup milk 1 cup vanilla yogurt 1/3 cup old-fashioned or instant oats 1 teaspoon honey (optional) 1/4 cup blueberries In processor or blender jar, puree strawberries with milk, yo- gurt and oats. Pour into glass or mug, sweeten with honey. Stir in blueberries. Eat with a spoon. - Makes 1 serving. HEAVENLY CHAMPAGNE (PARVE) 4 ripe peaches 1 tablespoon lemon juice 1 cup raspberries 1/4 cup confectioners sugar 2 small splits champagne Slice peaches. Do not peel. Toss in lemon juice to avoid turn- 1 ing brown. Stir in confectioners sugar. Gently stir in raspberries over. May refrigerate at this point. Just before serving, spoon fruit mixture into champagne flutes or goblets. Pour cham- pagne over. Serves 4. THREE-BERRY ROMANOFF (DAIRY) 1 cup sour cream 1 tablespoon grated orange rind 1 tablespoon cinnamon sugar 2 tablespoons cherry brandy 1 cup blueberries 1/2 cup sliced strawberries 1/2 cup blackberries 2 teaspoons brown sugar In bowl, mix together sour cream, orange rind, cinnamon sugar and brandy. Divide berries between 4 dessert dishes. Spoon sour cream mixture on top. Sprinkle with brown sugar and serve. Makes 4 servings. Note: If desired, use 1/2 cup plain yogurt and 1/2 cup sour cream.
