into the kitchens of some great
chefs.
Registration was followed by
a champagne breakfast on the
terrace; the soft sounds of flute
and guitar lent a background to
the table talk.

Preheat oven to 325 degrees. Line
9 x 5 x 3 inch loaf pan with
greased waxed paper.
Lightly beat eggs with electric
mixer. Slowly add sugar and salt
and beat until fluffy. Beat in half-
and-half and zests.
Sift flour with baking powder.
Add to egg mixture and beat un-
til smooth. Stir in butter. Pour
into prepared pan and bake
about 1 & 1J4 hours, or until cake
tester comes out clean. Cool in
pan on wire rack. Pierce top all
over with toothpick and brush
with orange juice. Cool com-
pletely, then invert to remove.
Serves 10 to 12.

The buffet tables offered mi-
mosas, coffee, mini-sweet rolls
and bagels. Then there were
platters of fresh fruit, cheeses
and fish. The hot dishes includ-
ed a mushroom saute, vegetable
quiche; French toast with a
pecan topping, hash brown pota-
toes, breakfast meats and
omelettes.
The morning program was an
offering of seminars in which
some of the well-known local
chefs shared their recipes; oth-
er speakers offered advice on
how to select, cut, store and
smoke cigars and how to savor
the differences in cognac; still
others gave valuable insight on
wine selection.
