ADVENTURES page 132 CHOCOLATE DEMI TASSE 15 egg yolks 4 ounces granulated sugar 7 egg whites 2 quarts whip cream 10 gelatin sheets 6 ounces single malt Scotch, such as Cragganmore 20 chocolate cups (or desired mold) Whip yolks and sugar over hot water bath until light in texture. Whip cream, set aside. Soften gelatin in cold water, drain and place in bowl with Scotch. Place the bowl over hot water bath and dissolve the gelatin. Remove from heat and add to whip yolk mixture. Whip whites to soft peaks and fold in whipped cream and pipe into desired molds. Freeze till firm. Serve with fresh berries and orange sauce. Makes 20 portions. SMOKED SCOTTISH SALMON AND GRAVLAX OBAN 4 smoked salmon or 4 raw salmon (4 ounces each) 1 bunch fresh dill, finely chopped 1/2 cup kosher salt 1/2 cup lightly crushed black and white peppercorns 1/4 cup chopped parsley 1/2 cup single malt Oban Scotch Get real. Add finely chopped dill and re- mainder of salt to salmon. Leave for one hour. Add Oban and pars- ley. Wrap tightly in clear plas- tic wrap twice; put into a pan and place a heavy object on top of salmon. (heavy cans or weights) Let sit in refrigerator for four to five days. Slice very thin and serve on cold plates with lemon and regular smoked salmon. The smoked fishes complement each other. DOUBLE CHOCOLATE MOUSSE chocolate cups raspberry sauce (recipe below) English cream (recipe below) 5 ounces Swiss chocolate 2 cups heavy cream 4 mint sprigs washed 12 raspberries 3 to 4 egg whites 112 cup powdered sugar (sifted) 112 cup Glenkinchie Scotch Heat chocolate in double boil- er over low heat. Take egg whites (making sure that they are pure whites—no yolks.) Put into mix- er in stainless steel bowl and beat with heavy whisk and form firm peaks. Add half of the sugar and finish whisking. Remove chocolate and let cool slightly. Beat cream the same way and add the rest of the sug- ar. Do not over beat. Fold heavy cream and egg whites into choco- late one at a time. This should be of a light consistency and not broken. Keep in refrigerator. Add Glenkinchie. Chill dessert plates. Make your sauce design and then put chocolate cups onto plate. Spoon chocolate mousse into cups and put mint sprig in center. Decorate plate with raspber- ries. Serve cold sauces immedi- ately. Four servings.
