IRON DEFICIENCY
Young women who exercise
and don't consume red meat
could set themselves up for iron
deficiency, say researchers at In-
diana's Purdue University. Even
women who engage in moderate
exercise could find themselves
suffering from anemia.
Working with researchers from
Penn State University and the
University of Florida, the re-
search team studied previously
sedentary women for six
months. They found that the
women lost enough iron to bring
on feelings of fatigue, a symptom
of anemia.
Part of the problem is that
women often don't have enough
iron in the first place.
"Women are typically more at
risk for reduced iron levels be-
cause of blood loss due to men-
struation and because women
typically eat less red meat than
men," says Connie Weaver,
head of Purdue's Department of
Foods and Nutrition. "Also, men
have more hemoglobin in their
blood, and therefore have a larg-
er supply of iron to begin with."
Iron is necessary to carry oxy-
gen to the body's red blood cells
and carry carbon dioxide away
from the cells.
The researchers say that get-
ting iron from food is preferable
to relying on supplements. Good
sources include red meat, dark-
meat chicken, beans, grapes,
raisins, tomatoes and apple
juice. Organ meats, such as liv-
er, are especially good sources
of iron.
"Even what you drink with
your meal makes a difference,"
Weaver points out. "Citrus juice
helps the body absorb iron be-
cause of the vitamin C. Tea, on
the other hand, will reduce the
amount of iron absorbed be-
cause compounds called tannins
in the tea inhibit iron absorp-
tion."
REDUCED SWEET TOOTH
There's a small added bonus
for people who undergo gastric
bypass surgery to treat severe
obesity: They lose their craving
for sweets.
Ohio State University re-
searchers found that people who
underwent the surgery had an
increased sensitivity to sweet
foods at six and 12 weeks after
surgery. Foods that formerly
tasted normally sweet seemed
especially sweet after the
surgery, which means they ate
less of them. The patients
weren't bothered by this change
of taste; in fact, they were hap-
py to be eating fewer sweets.
This change of taste does not
occur in patients who undergo
traditional dietary weight-loss
therapy.
