CAVIAR Makes 3 cups-Use as an accom- paniment to any type of cooked meat and adds an interesting di- mension to any sandwich. 2 cups drained cooked black beans, rinsed 1 cup chopped onion 1 red bell pepper, seeded and chopped 2 pickled jalapenos, chopped medium fine 1 clove garlic, finely chopped 1/3 cup red wine vinegar 1 1/2 tablespoons sugar 1 teaspoon chili powder 3/4 teaspoon dried savory 1/2 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon cayenne 1/4 teaspoon white pepper 1 tablespoon lemon juice STATE FAIR BLACK- EYED PEA AND SWEET ONION RELISH Makes 3 1/2 cups 1 - 10 ounce package frozen black-eyed peas, cooked according to package directions and drained 1 1/2 cups chopped Vidalia or other sweet onion 1 red bell pepper, seeded and chopped 1/2 cup chopped celery 1/2 teaspoon salt 1/4 teaspoon dried red pepper flakes 1/2 cup cider vinegar 1/4 cup packed light brown sugar 1 tablespoon dry mustard 3/4 teaspoon mustard seed (optional) In a large bowl, combine the black-eyed peas, onion, red pep- per, celery, salt, and red pepper flakes. In a medium-sized, non-reac- tive saucepan, combine the vine- gar, brown sugar, mustard, and optional mustard seed. Bring just to a boil over medium-high heat, stirring to dissolve the sug- ar and dry mustard. Pour the hot liquid over the vegetable mixture and stir to mix well. Let cool, transfer to a covered container and refrigerate for at least 1 hour more to allow fla- vors to blend. (Can be made 4 days ahead and kept refrigerat- ed.) To serve, use a slotted spoon to transfer relish to a bowl, leav- ing any excess liquid behind. SWEET CORN, BLACK BEAN AND RED PEPPER SALSA Makes 4 cups, about 8 hors d'oeuvres reactive saucepan, combine the vinegar, sugar, chili powder, sa- vory, cumin, salt, black pepper, cayenne and white pepper. Bring to a boil over medium- high heat, stirring to dissolve the sugar. Add the black bean mix- ture, bring to a boil, stirring fre- 1 1/2 cups drained cooked black beans, rinsed 1 cup thawed frozen corn kernels 1 large red bell pepper, seeded and chopped 3/4 cup sliced scallions, including green tops 3 tablespoons olive oil 1 tablespoon lime juice 1 large clove garlic, minced 112 to 1 jalapeno pepper, fresh or pickled, minced 1 teaspoon sugar 112 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 cup chopped cilantro quently, and simmer for 1 minute.
