`The managers in each restau-
rant have the kosher menu, so
we are ready whenever someone
wants it," explains Mario Ferro,
executive chef.
The award-winning chef, a na-
tive of Bogota, Colombia, is tak-
ing a rare break from a typically
hectic day to talk about one of his
favorite subjects — kosher food.
It was Chef Ferro who three
years ago initiated the idea of cre-
ating a kosher menu to be avail-
able at all times, not only in high
season or during Passover. By
then he had been at the Caribe
Hilton for six years, and he knew
well the tastes of the longtime
Jewish guests, many of whom re-
turn to the hotel year after year.
"We know what foods they
like, so we decided to write a com-
plete menu," relates Chef Ferro.
It was so successful that he
now imports hefty quantities of
kosher food every week: 200
pounds of Empire chicken, 100
pounds of hot dogs, 40 pounds of
rib eye steak.
His enthusiasm for the quali-
ty of kosher food is such that he

Jewish guests; in the hotel's in-
formal eatery, El Cafe, every
guest who orders chicken gets
kosher chicken.
Similarly, the only hot dogs
served at the outdoor beachfront
grill are kosher ones. "The taste
is much better," says Chef Ferro.
In this island environment,
seafood also is a popular choice,
and Chef Ferro has trained his
staff to prepare it carefully for ob-
servant guests. "We cook it in an
aluminum foil pouch so it doesn't
touch anything else," explains
Chef Ferro.
In his office near the exten-
sive kitchen facilities on the sec-
ond floor, the walls are covered
with awards, certificates, and
copies of glowing reviews. On
the shelves are plaques and tro-
phies. Besides his overall culi-
nary talent, Chef Ferro, who is
not Jewish, has become an ex-
pert in kosher cooking, oversee-
ing everything kosher-related,
from bar mitzvah receptions to
the kosher menu, with selections
available under dairy, fleishech,
and parve.
The chef also took the unusu-
al step of inviting the rabbi to
give a special seminar on kosher
regulations for the kitchen staff.
"Its' very important to know
the rules and to follow them pre-
cisely," says Chef Ferro, whose
kosher experience began early,
when he was training at the
Caracas Hilton in Venezuela,
where the members of the Jew-
ish community often held their
wedding receptions. About 80
percent of all Jewish functions
in San Juan are held at the
Caribe Hilton. Whether it's a
Shabbat dinner or a festive
seder, the knowledgeable chef
and his well-trained staff are ea-
ger to make it memorable for
Jewish guests.
"It's a special challenge to pre-
pare the kosher food," says Chef
Ferro. "Our Jewish clients are
very loyal patrons and we want
to give them our very best." ❑

All this might be nothing out
of the ordinary ha New York City
or Miami. But in San Juan,
which has not one kosher restau-
rant and only a tiny Jewish pop-
ulation, a hotel with kosher food
available at any time (it can even
be ordered from room service
anytime) is unusual indeed.
The landmark 17-acre prop-
erty, with tropical gardens, pri-
vate beach, tennis courts, and
guest rooms with balconies over-
looking the Atlantic Ocean, has
long attracted Jewish guests. Its
