For Free Estimates (810) 681-8280, 1J2 cup all-purpose flour 1 cup whole wheat flour 1 cup wheat germ 3/4 cup rolled oats 1 tablespoon baking powder 2 teaspoons ground cinnamon One (12-ounce) can unsweetened frozen apple juice concentrate, thawed 1/3 cup natural unsweetened applesauce 2 large eggs, whites only 1 cup dried cranberries Light vegetable oil cooking spray Preheat the oven to 375 degrees. In a large mixing bowl, whisk together the dry ingredients. Combine the apple juice concen- trate, applesauce, egg whites, and cranberries in a blender. Blend at low speed until the cranber- ries are coarsely chopped. Add the mixture to the dry ingredi- ents and stir to combine thor- oughly. Spray 2 cookie sheets lightly with the vegetable oil spray and distribute the oil evenly. Drop the batter by the half tablespoon onto the cookie sheets. Bake for 8 to 10 minutes, until the cookies are a light golden brown. Transfer the cookie sheets to a wire rack and cool for a minute or two. Remove the cookies to a plastic storage bag, this will keep them moist. When the cookies have cooled completely, seal the bag to preserve freshness. Yield: About 60 cookies, 0.34 grams fat per cookie, 35.4 calo- ries per cookie. BANANA CREAM PIE 3/4 cup sugar 1/4 cup cornstarch 1/8 teaspoon salt 21/4 cups skim milk 1/4 cup nonfat liquid egg substitute 1 1/4 teaspoons vanilla extract 1 prepared and baked Nutty Crust (recipe below) 1 1/2 large bananas, about 12 ounces, cut into 1/4 inch slices, about 1 1/2 cups Combine the sugar, cornstarch, and salt in a saucepan. Slowly whisk in the milk. Whisk in the liquid egg substitute. Bring to a boil over medium-high heat, stir- ring constantly. Reduce the heat to low and cook, stirring, for 2 minutes more. Remove the pan from the heat and stir in the vanilla. Pour half (about 1 114 cups) into the crust. Set aside for about 15 minutes to cool. Layer the bananas onto the partially filled shell and spread the remaining filling on top. Cov- er and chill until set, about 1 hour. Yield, 8 servings, 0.68 grams fat per serving and 180.9 calories per serving. NUTTY CRUST 2 cups Grape-Nuts Flakes cereal 2 teaspoons ground cinnamon 1 large egg, white only 2 tablespoons freshly squeezed orange juice Light vegetable oil cooking spray Preheat the oven to 350 degrees. Put the cereal into the bowl of a food processor and process to fine crumbs, about 2 minutes. Transfer to a bowl and mix in the cinnamon. Add the egg white and orange juice. Mix thoroughly. Spray an 8-inch pie plate once lightly with the vegetable oil spray and spread the oil evenly to coat. Turn the cereal mixture into the plate. Press down with moistened fingers to form a shell.
