heated oven for 50 to 60 minutes
or until toothpick comes out clean
when inserted in center. Serves

MOCHA HONEY CAKE
(PARVE)

1 large orange, unpeeled
3/4 cup cool strong black coffee
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon ground nutmeg
2 eggs, lightly beaten
2 egg whites
1 square (1-oz) unsweetened
baking chocolate, melted
1/2 cup vegetable oil
1/2 cup honey, warmed
1/2 cup crystallized ginger,
chopped (optional)

Preheat oven to 350F. Spray
11- by 14-inch baking pan with
non-stick vegetable spray. Cut or-
ange into 8 chunks. Place
in food processor or blender
jar with coffee. Process until or-
ange is finely chopped. Set aside.
In large bowl, mix flour, baking
soda, baking powder, and
nutmeg. Make a well in center.
Pour in orange mixture, eggs, egg
whites, chocolate, oil and honey.
Stir to mix well. Pour
into prepared baking pan.
Sprinkle ginger on top. Bake in
preheated oven 1 1/4 hours or un-
til toothpick comes out clean
when inserted in center. Cool and
cut into squares. Serves 16 to 20.
Note: This freezes well. May
want to use half and freeze the
rest, wrapped tightly in wax pa-
per, then in foil. El
