HONEYED WINTER
FRUIT (DAIRY)

1 teaspoon butter
1 teaspoon sesame oil
2 tablespoons honey
1 tablespoon lime juice
1 red apple, unpeeled, cored and
quartered
1 boss or anjou pear, unpeeled,
cored and quartered
1 cup black grapes, halved
1 tablespoon grated lime rind

In large non-stick skillet, heat
butter, oil and honey over medi-
um heat. Cut apple and pear into
thin wedges and add to mixture
in skillet. Stir-fry over high heat
2 to 3 minutes. Remove from heat
and stir in grapes. Transfer to
serving bowl. Sprinkle with lime
rind. Serves 6 as a topping.

CINNAMON-CRUSTED
PINEAPPLE PUDDING
(DAIRY)

4 tablespoons (1/2 stick)
margarine
3/4 cup sugar
1 egg
4 egg whites
1 teaspoon vanilla extract
20-oz can crushed pineapple,
undrained
3 cups fresh bread, in 1-inch
cubes
2 tablespoons sugar mixed with 2
teaspoons cinnamon

OPEN MONDAY - SATURDAY

Place pears, apricots, prunes
and cherries in a saucepan. Pour
wine over and enough hot water
to come about 1 1/2 inches above
fruits. Stir in brown sugar or hon-
ey, lemon and cinnamon stick.
Bring to simmer. Partially cover
and cook 30 minutes. Serve
chilled or at room temperature.
Serves 6 to 8 as a topping.

Preheat oven to 350F. Spray
2-quart baking dish with non-
stick vegetable spray. Cream to-
gether margarine and sugar. Add
egg, egg whites, vanilla and beat
well. Stir in undrained pineap-
ple, then fold in bread. Spoon into
prepared baking dish. Sprinkle
with cinnamon sugar mixture.
Bake in preheated oven for 45
minutes until browned and crisp
on top. Serves warm. Serves 8.
