Try this highly scientific ex-
periment: Pour yourself and a
couple of friends glasses of two
different chardonnays costing,
say, $10 or so each. Now try to
compare the two wines.
Look at the colors, swirl the
wines around in the glasses and
put your snoot in. Take a sip and
feel the weight of the wine,
the relative sweetness or acid-
ity, the creaminess or leanness
of the texture. Now try to tell
each other what's different
about the two wines. The words
are simple: maybe terms like
buttery, appley, pearlike, exoti-
cally fruity, smoky, soft, juicy,
spicy.
You just never thought that
you would be using them to de-
scribe a wine.
It's not really important what
words you use (though it is cer-
tainly revealing that everybody
will use different ones).
The point is that you've paid
attention to something we don't
often stop to appreciate: our own
senses of smell and taste and
also touch.
Learning to enjoy wine isn't
really that much more compli-
cated than learning to like great
steak or a fresh piece of salmon.
There are just more choices out
there.
The one phrase I probably
hear most often is, "I don't know
anything about wine." People
say this as if they had been
handed some kind of life sen-
tence: You will miss out on this
pleasure forever.
The fact is that you don't need
to know anything to enjoy wine
except how to get it out of the
bottle. ❑

Stir-frying is a quick, lean cook-
ing method. For tastier dishes,
follow these suggestions from
Jan Weimer, former executive
editor of Bon Appetit:
Cut food to be cooked togeth-
er into uniform pieces.
Set food aside until it reach-
es room temperature.
Heat the bottom and sides of
a 12- to 14-inch wok over high
heat until droplets of water
dance on the surface.
Coat sides and bottom of wok
with cooking oil, then add sea-
sonings, followed by vegetables.
Remove crisp-tender vegetables
from wok, then cook meat poul-
try or seafood last.
