Now try to compare the two wines. Look at the colors, swirl the wines around in the glasses and put your snoot in. Take a sip and feel the weight of the wine, the relative sweetness or acid- ity, the creaminess or leanness of the texture. Now try to tell each other what's different about the two wines. The words are simple: maybe terms like buttery, appley, pearlike, exoti- cally fruity, smoky, soft, juicy, spicy. You just never thought that you would be using them to de- scribe a wine. It's not really important what words you use (though it is cer- tainly revealing that everybody will use different ones). The point is that you've paid attention to something we don't often stop to appreciate: our own senses of smell and taste and also touch. Learning to enjoy wine isn't really that much more compli- cated than learning to like great steak or a fresh piece of salmon. There are just more choices out there. The one phrase I probably hear most often is, "I don't know anything about wine." People say this as if they had been handed some kind of life sen- tence: You will miss out on this pleasure forever.
