When Chef Allen Susser was
growing up in an Orthodox Jew-
ish home in Borough Park and
helping his grandmother make
{cholent} for the Sabbath, little
did he know that in 1994 he
would be the winner of the James
Beard Award as the Best Amer-
ican Chef in the Southeast.
Chef Susser said he remem-
bers, as a child, making honey
cakes baked in brown-paper-bag
liners and using a hand grinder
for grinding up meats for the veg-
etable-meat stuffing for kishka.
The only difference is today,
instead of helping his grand-
mother make stuffed kishka and
honeycake, he is using what he
calls "New World Cuisine" to
please the palates of his patrons
at Chef Allen's in North Miami
Beach.
Chef Susser opened the restau-
rant nine years ago and he has
just written his first cookbook,
New World Cuisine describing his
tropical fusion of vibrant Latino
and Caribbean flavors.
This style of cooking is easily
combined with Jewish traditions.
Below are some new world cui-
sine recipes from Chef Allan.

Preheat the oven to 350 degrees.
Place the cored apples in a medi-
um-size baking pan. Pour the
honey over the apples and fill the
pan about halfway up with hot
water. Add the cinnamon sticks
to the water.
Cover with aluminum foil and
bake for 40 minutes, or until the
apples are soft. Once the apples
are done, drain the water, discard
the cinnamon, and allow the ap-
ples to cool.
To wrap the apple:
Make sure to keep the unused
phyllo covered with a damp tow-
el while you are working. Lay out
4 or 5 sheets, brushing each one
with the butter, then sprin-
