Chef Chuck "Rocky' Rach- witz smiled graciously and replied, "about 50 pounds." But it wasn't until the guy was walking out that he realized the big difference in Rocky's looks wasn't only his loss of weight. A picture of the former C.A. Muer corporate chef on a promo- tion piece for his restaurant showed Rocky wearing a goatee and mustache ... They're both gone now. Neither the loss of weight or facial foliage have taken away from Rocky's fine cooking and presentation abilities. He is the chef/owner at Rocky's of Brighton, where on this Sat- urday night it would serve over 450 dinners from a much small- er kitchen than the one at his hocicy's of Northville. In Brighton, the cooks work on a line 12 feet long ... In Northville, it is 36 feet long. It opened May 3, after Rocky had purchased The Roadhouse at Oak Pointe, located at the Oak Pointe Golf Course on Brighton Road five months earlier (Jan. 1) ... and a full-scale top-to-bottom remodeling program was begun. Seating is for 100 in the main dining room, 60 on a porch, 50 up- stairs and 60 in the bar lounge area. The building is a classic coun- try-style home with many win- dows, fireplace, patio for outdoor dining and quaint little nooks that separate the dining sectors. Its decor is similar to his Rocky's of Northville, with earth- tone colors, wildlife prints of elks, wolves, birds and hand-carved duck decoys. White linen tablecloths and burgundy linen napkins set off the menu that includes many fa- vorites ... Specialties like Rocky's signature dish, potato encrusted whitefish, salmon en papillote (baked in parchment paper), and roasted 1/2 duck with wild cher- ries and natural sauce. The seven or more fresh fish items are heavy sellers at Rocky's of Brighton ...from broiled white- fish to rainbow trout to pickerel to grilled Atlantic salmon ... There are always at least 11 seafood and meat entrees ... Grilled skinless chicken breast, braised lamb shank, Gulf shrimp casino, Maryland lump crab- cakes, broiled lamb chops, bar-b- q ribs, etc ... Also six pastas. For the less hungry or diet watchers, Rocky's of Brighton has five salads and Angus burgers (5- or 8-ounce). • Of course there is the fish and conch chowder full of chunky veg- etables and tomato sauce, and a crock of baked French onion soup topped with gruyere and moz- zarella cheese. Rocky's of Brighton is open seven days a week ... Lunch is Monday through Saturday, 11:30 to 4; dinner Monday through Thursday, 4 to 10; Friday and Saturday to 11; Sundays, 1 to 9. Just about everything is home- made ... breads, sauces, desserts, etc. Rocky Rachwitz is blessed with excellent help ... and you know what a plus this is in the restau- rant game ... His general man- ager in Brighton, Jim Murray, spent the last two years manag- Karmanos Institute...Number one is the big annual dinner ... So exciting to see the dedication of these youthful folks toward the furtherance of health care and education. Some 460 attended its recent Partners Ball at the Athenum Hotel ... and over 250 at the group's golf outing three days ear- lier ... More than $300,000 was raised by the two affairs, topping the $250,000 in its first efforts last year. Stan Krandall, chairman of the Partners executive committee, couldn't have been happier with the turnout as he welcomed folks to the event that recognized the late Geraldine Rissman, Jean and Sam Frankel, Pat and Jan Hartmann and Miriam and Dr. Jeffrey Forman ... Stan's wife, Chef Rocky Rachwitz ing all four restaurants at the Culinary Institute of America in Hyde Park ... to go with his six months of training at the Northville location. Rocky divides time equally be- tween his two operations and is one of the major reasons for his two successful restaurants ... Rocky's thorough know-how is a wonderful asset ... and his em- ployees appreciate it. But not more than his cus- tomers. THE NEWLY named Bar- bara Ann Karmanos Cancer In- stitute (formerly Michigan Cancer Foundation) has a lot to look forward to in excellent re- search for a prevention and cure of the dreaded disease. It was shown by the Partners Group ... young guys and gals who, in just two years, have vaulted their annual golf and black-tie dinner dance into the second largest fund-raiser by Connie, was mighty proud of her husband. So many people with such pride in tomorrow's leaders ...
