ual salting process, the meat
could not be certified as kosher.
That would pose a special prob-
lem for smaller kosher meat
processors, said Abba Cohen,
Washington representative for
Agudath Israel of America.
Last week, Mr. Cohen headed
up a delegation of Orthodox lead-
ers and kosher foods executives
who met with Agriculture Secre-
tary Dan Glickman.
Included were representatives
of the Union of Orthodox Jewish
Congregations of America, the
Star-K certification agency in
Baltimore, the Rabbinical Coun-
cil of America and several ma-
jor kosher meat processors.
As a result of the Orthodox lob-
bying, Mr. Glickman reopened
the official public comment pe-
riod.
"The secretary asked a lot of
detailed, informed questions
about kosher procedures and the
kosher consuming public," Mr.
Cohen said. "He made it clear
that the USDA is committed to
finding procedures that will sat-
isfy health and safety concerns,
while accommodating the reli-
gious needs of observant Jews."
Mr. Glickman promised to in-
clude the Orthodox leaders in any
future deliberations about the
proposed regulations.
"We're not out of the woods
yet," Mr. Cohen said. "But this
was a very good first step."
