in to 2/3 c. GRAPE NUTS

MACADAMIA STUFFED
MUSHROOMS

1 lb. fresh mushrooms
1/3 c. butter or margarine
1/3 c. chopped onions
1 c. crushed SPECIAL K
1/3 c. chopped macadamia nuts
3 T. chopped parsley
3 T. shredded Monterey Jack or
Cheddar cheese
1/4 t. salt
1/8 t. black pepper

Preheat oven 350. Remove the
mushroom stems Chop stems
and set set aside. Melt the but-
ter and brush the outside of the
caps with it. Place caps in a
greased baking dish. Take re-
maining butter and saute onions
and chopped sterns until they are
tender, about 10 minutes. Re-
move from heat. Add SPECIAL
K, nuts, parsley, cheese, salt and
pepper. Mix well. Spoon about
1 T. of the mixture into each cap.
Bake 10 to 12 min until mush-
rooms are tender. Approx 20
mushrooms.
