heard about the luscious Larco's
antipasto, will have mouth-wa-
tering tingles as they enjoy the
tri-colored roasted peppers (they
still make their own tri-colored
peppers), olives cured by them,
imported salami, imported cheese
and shrimp cocktail.
A wonderful, simple but large
menu is still retained by Mark at
his Larco's in Troy,_ with veal
dishes folks know and love ...
Colombo, filetto, marsala, parmi-
giana, picatta, Siciliano and
Tosca ... For those who can't
make up their minds, Mark has
capriccio, a combination of
Colombo, picatta, marsala and
Siciliano.
If it's steak you want, Larco's
continues to be a steak house
with about nine selections, in-
cluding tenderloin spiedini
(medallions of beef, prosciutto
and cheese, rolled, skewered and
broiled); tenderloin peperonato,
sauteed with tri-colored peppers,
onions and mushrooms; tender-
loin medallions broiled and
prepared Sicilian style, served
with ammogghio sauce; and
of course the various filets,
strip, porterhouse and chateau-
briand.
Eight fish dishes, eight chick-
en favorites, 12 regular pastas
from choices of spaghetti, mostac-

family business.

cioli, linguine, fettucine, angel
hair ... nine stuffed pastas from
selections of ravioli, manicotti,
tortellini, lasagna and gnocchi.
All dinners except pasta, are
served with a house salad, side
of spaghetti bolognese, potatoes
Anna, and vegetables.
Even the shrimp Larco is there
... I remember people talking
about the dinner they were going
to have at Larco's on West Mc-
Nichols ... and of the shrimp Lar-
co appetizer that Pete used to
make, lightly breaded and
sauteed with garlic-lemon
Chablis sauce.
Mark gets spumoni made by
his sister, Maria Palazzolo, in
Saugatuck ... She also makes the
delicious variety of sorbettos like
rose champagne, a sherbet with
edible rose petals, $2.95 ... with
raspberry sauce, $3.75.
People love the foccacio bread
made at Larco's in Troy ... with
dried tomatoes (they do their own
drying) and herbs ... Basil, by the
way is grown at the home of Ex-
ecutive Chef Lee Vulaj, five years
at Troy's Larco's and a 1981 grad-
uate of the Culinary Institute in
Hyde Park.
Larco's in Troy was only the
second restaurant designed by
David Goldburg ... Alban's was
first ... Photos throughout the
restaurant are various scenes

taken of one villa in Italy by Balt-
hazar Korab.
Larco's on East Big Beaver is
open seven days, Monday
through Thursday, 11 to 10; Fri-
day 11 to 11; Saturday 5 to 11;
and Sunday 4 to 9.
It is still a family-oriented op-
eration ... Mark and Susan's son,
Pete, named after his grandfa-
ther, is prep cook during days,
and host and busboy during
evenings ... If the dishwasher
doesn't show up, he's that, too ...
Pete attends Central Michigan
University, recruited after being
on the Brother Rice wrestling
team ... Mark's mother, Frances,
handles the coat-checking sector
in winter.
Josie Knapp, Susan's cousin,
has been a waitress at Larco's the
past three years ... and like the
three Larco brothers, Mark and
Susan also have three boys, Pete,
Mark and Mike.
One of the waiters, Silvio Lan-
za, at Larco's in Troy since it
opened, says hello to many cus-
tomers ... He spent 16 years at
the Larco's on West McNichols.
Just the sight of that sign on
East Big Beaver ... Larco's ... is
enough to rekindle memories for
many.
The fact that Mark has re-
tained the flavor created by his
father and uncles is deserving of
much credit.
The name Larco's is time-hon-
ored ... but many others who
have tried to follow in the foot-
steps of a reputation have found
sledding too rough to handle.
A name is important ... and
can bring success ... But only if
used wisely.
In the restaurant business, use
of the same recipes and very
slight menu variations will in
most cases produce a winner.
Mark Larco, with wife Susan,
has not let his father and uncles
down ... So much so that if Pete
were alive today, he would proud-
ly say, "That's my boy!"
CONGRATS ... to Zelda and
Charles Levitt ... on their 65th
anniversary ... to Elaine and
Barry Margolis ... on their 11th
anniversary.
JOINING the new restaurant
parade is Cicero's Ristorante on
Novi Road, north of 10 Mile, in
the Pine Ridge Shopping Center
... Menu by owners Chris and
Jim Stevens has pasta dishes,
veal favorites, six seafood plat-
ters including maple-planked
Norwegian salmon and oven-
roasted whitefish in an al-
mondine crust, steaks, chops,
chicken, etc.
SIX FINE local chefs will cook
up a bevy of goodies at the black-
tie optional benefit for National
Multiple Sclerosis Society ... It's
Casablanca Midsummer Nights
Dream, at Ritz-Carlton, July 28,
6:30 p.m., with culinary hors
d'oeuvres, cocktails, gourmet din-
ner, entertainment, dancing and
silent and live auction. El

STAR DELI

Go against the grain.
Cut down on salt.

Adding salt to your food
could subtract years from
your life. Because in some
people salt contributes to
high blood pressure, a con-
dition that increases your
risk of heart disease.
