Spiced Red Cabbage

A New Year's twist, this dish makes a colorful addition to a tradi-
tional holiday table. Make a resolution to serve it often, too!

4 cups
1/4 cup
1/2 cup
1/4 tsp.
1/4 tsp.

shredded red cabbage
cider vinegar
water
ground allspice
ground cinnamon

1/8 tsp.

ground nutmeg
tart apples, peeled
cored and diced
sugar

In a saucepan, combine shredded cabbage with all other ingre-
dients, except apples. Cover and cook over moderate heat for 15
minutes, tossing several times so the cabbage will cook evenly.
Add apples, and toss again. Cover, and cook 5 minutes longer.
Add sugar.
If more water is needed during cooking, add two or three table-
spoons, but when the dish is done, all moisture should have been
cooked away.

The Seminary apparently mis-
understands the real arithmetic
of the matter: Newt Gingrich
adds nothing to its luster by his
presence at its dinner; it is the
seminary that adds to Newt Gin-
grich — and in so doing, sub-
tracts from itself.
Yes, of course, there are some
trustees of the seminary who are
conservative Republicans. Let
them invite Arlen Specter, or Bill
Bennett. But Mr. Gingrich is no
conservative; he is a radical, a
zealot given to verbal violence
whose ethical principles have yet
to be discerned and whose polit-
ical principles (such as they are)
violate the undoubted views of
the overwhelming majority of
America's Jews — and, much
worse yet, whose actions will
cause real pain to real people
across the land and great dam-
age to our society.

For JTS to offer
Mr. Gingrich an
honored place at its
table is a disgrace.

Is all this debatable? Of course
it is. Let Mr. Gingrich, then, be
invited to the Seminary for the
purposes of debate. But do not
lead him to think himself worthy
of the dignity an invitation to ad-
dress a Seminary audience ought
to imply. And do not lead young
Jews in search of a home in the
Jewish community to think that
we are soul-less by inviting Mr.
Gingrich.
With this one scurvy -conces-
sion to the fund-raisers, JTS sub-
verts the value of a million
dollarsrworth of the excellent pro-
grams that have long distin-
guished it. Nor does it do right by
Louis Marshall (1856-1929),
one-time chairman of the
Seminary board and effective
champion of cause upon cause
that are light years distant from
the dark precincts Mr. Gingrich
inhabits. CI
