The opening of another restau-
rant by Brian will be some time
this year in downtown Milford,
where he lives with wife Julia
and their five children.
When dining at Acadia, you
may well be having your food pre
pared by Michigan's next or soon-
to-be certified master chef ... If
Brian ever gets the time, he'll
take that 10-day, 14-hours-daily
test given by the Culinary Insti-
tute of America in Hyde Park,
N.Y. ... With seven certified mas-
ter chefs (plus two certified mas-
ter pastry chefs), Michigan ranks
second only to New York, and re-
member that the population of
Michigan would just about fit into
Manhattan itself ... Also, don't
forget that some of those profes-
sors at the Culinary Institute are
certified master chefs themselves
You somehow get the feeling
that Brian Polcyn has only just
begun.

Acadia's wood
roasting attracts
attention.

HAVING PASSOVER seder
aboard ship was a memorable
highlight of a most pleasant
cruise on Holland America's M.S.

Maasdam.

It was much more than ex-
pected and attended by about 50
sea-farin' vacationers who were
likewise impressed ... Those like
Lee and Judy Bluestone of San-
ta Monica, Calif., had much grat-
ification for the consideration
given by Maasdam's Captain
Hans Mateboer and his crew.
Rabbi Morris Raab of Hallan-
dale, Fla., conducted a thorough
Passover seder complete with
Haggadots, yarmulkes and tra-
ditional dinner, prepared by ex-
ecutive chef Karel Leemkuil and
served in the privacy of Maas-
dam's Half Moon room by red-
jacketed and white uniformed
gentlemen.
On all tables with blue linen
tablecloths and blue linen nap-
kins was a traditional Passover
ceremonial dish and Mogen
David wine, continually refilled
by the servers ... The blue menu
given each of the guests includ-
ed hors d'oeuvres, gefilte fish,
chrane sauce, chicken soup with
matzah ball, roasted chicken, car-
rots, sweet potato and prune tz-
immes, asparagus with lemon,
lettuce with tomatoes, apple
sauce, raspberry sherbet, maca-
roons, sponge cake, assorted fresh
fruit, mixed nuts, coffee or tea.
Our table of Lee, Judy and
Rabbi Raab was highly pleased
at the good taste with which

everything was presented ... in-
dicative of the food goodness, too,
aboard the Maasdam.
This was the second night of
Passover ... The first night was
services by Rabbi Raab with buf-
fet of matzahs, gefilte fish, veg-
etables, wine and traditional
seder plates.
The public relations factor pre-
sented by Holland America Lines
on the Maasdam's Panama
Canal cruise was immensely so-
lidified for its Jewish passengers.
From the moment we board
the M.S. Maasdam, through
Guatemala, Costa Rica, Grand
Cayman and the amazing Pana-
ma Canal to its docking in Ft.
Lauderdale, the entire cruise was
a complete journey of first-class
enjoyment, including entertain-
ment that was as excellent as one
would expect from a cruise as fine
as this.
17th ANNUAL Le Gala de
Cuisine by Cranbrook Schools,
one of the area's best events of its
kind, is this Sunday, 3 p.m. to 7
p.m., at the Lone Pine Road cam-
pus ... Over 35 chefs, many with
recognizable names, from 30
metro regions, will again weave
culinary magic ... Le Gala de
Cuisine always features topnotch
hors d'oeuvres, entrees, desserts,
coffees and champagne from top
restaurants ... Included in the
admission of $125 (friend), $150
(patron) or $200 (benefactor) is a
fine cookbook with treasured
recipes from participating chefs

calls her almost 81-year-old dad,
Frank Winton, "The bionic man."
While recently at Beaumont
Hospital with pneumonia, Frank,
who is number three on the se-
nior tennis circuit in the United
States, was concerned about his
training ... The nurses were
alarmed when his blood pressure
suddenly rose almost 15 points
from one day to another ... Frank
said that he had been doing
situps and exercises to keep in
shape.
FUN EVENING is set for
May 7 at the Northfield Hilton in
Troy, 7 p.m. ... $15 per person
